Last
night on facebook, I posted a photo of a soup I made that is somewhere
between zero and one weight watchers point per serving. There are lots
of recipes out there but I really like this one so I'm sharing it with
you.
Zero Point Soup* Broth: 5 cups of vegetable broth 2 tablespoons of tomato paste 1 teaspoon basil 1 teaspoon oregano 1/2 teaspoon minced garlic salt to taste Veggies: 1 large onion 1 bag of frozen medley (cauliflower, broccoli, carrots) 1 can of cut green beans 1 red pepper (You can add other vegetables that that you like as well. Stay away from things like any kind of potato, beans, corn, peas- too starchy and will add points.) In a pan, spray some cooking spray and sautee one cut up onion and one red pepper for a few minutes. Mix broth ingredients in a large pot and start to cook on high heat until it starts to boil, then turn to medium. Add sauted vegetables, bag of frozen medley and drained can of green beans. Simmer on stove for about an hour or so or until all vegetables are soft and soup is hot. 5 one cup servings |
